Bourbon Mash 101 - CORN

There is quite a list of rules we must abide by in order to put “bourbon” on the front of our
bottles. We won’t get into all of them today, but one of the biggest rules has to do with its
main ingredient, Corn. Bourbon must be crafted with corn being at least 51% of the mash bill
(recipe).
A great way to think about how different grains impart their characteristics on a whiskey, is to think bread! Corn bread is sweet. The more corn that is in a bourbon recipe, the more
sweetness you will taste. I understand that is a very generalized, simplified statement, but an
easy way to think about bourbons if you are searching for something new or just getting
started on your bourbon journey.
Without the ability to sit our distillery on our own farm, we got the next best thing. Our corn is sourced from Cuson Farms in Mill Creek, IN, located only about 14 miles from the distillery. As a 4th generation family farm, it fits right in with the community focused, artisan mentality we pride ourselves with when crafting our bourbon. It’s Indiana Through and Through. If your hair gets a bit frizzy this time of year, you might have our beloved corn to thank for that. Fun fact about corn is that, just like us, it sweats! Just 1 acre of corn can release up to 5,000 gallons of water into the atmosphere and contributes heavily to humidity swings here in Indiana and throughout the midwest.
Our mash bill consists of 80% corn so it’s the most important for us. It’s the backbone of our whiskey, as well as our state. We get it locally, mill it ourselves, cook it to perfection, and craft an approachable, smooth bourbon that we are super proud of.
